Any date can be chosen although usually not the three days before Easter Sunday. Generally priests will not marry divorcees. Attitudes to choices of non-Biblical readings and music varies from parish to parish Catholic marriage is a sacrament and very serious commitment. If you do not have a religious conviction perhaps an alternative ceremony may be better.
